8 oz sweet potato noodles (dangmyeon)

2 tbsp sesame oil

1 tbsp vegetable oil

1 medium onion, thinly sliced

2 cloves garlic, minced

1 carrot, julienned

1 red bell pepper, julienned

1 cup shiitake mushrooms, sliced (or any mushrooms of your choice)

1 cup spinach, washed and drained

2 green onions, chopped

3 tbsp soy sauce

1 tbsp sugar

1 tbsp sesame seeds (for garnish)

Salt and pepper to taste

Instructions
 

Cook the Noodles: Start by bringing a pot of water to a boil. Add the sweet potato noodles and cook according to package instructions, usually about 6-8 minutes. Once cooked, drain and rinse with cold water to stop the cooking process. Set aside.

    Prepare the Vegetables: While the noodles are cooking, slice the onion, garlic, carrot, red bell pepper, and shiitake mushrooms. Make sure the spinach is washed and drained to remove excess moisture.

      Sauté the Aromatics: In a large pan or wok, heat 2 tablespoons of sesame oil over medium heat. Add the minced garlic and sliced onion, sautéing until the onion becomes translucent.

        Incorporate the Veggies: Add the carrot, red bell pepper, shiitake mushrooms, and a sprinkle of salt and pepper. Stir-fry for about 5-7 minutes until the vegetables soften but remain vibrant and colorful.

          Add Spinach and Noodles: Toss in the spinach and cook until just wilted, about 1-2 minutes. Next, add the drained noodles to the pan. Gently mix everything to combine.

            Season the Dish: In a small bowl, whisk together the soy sauce and sugar. Pour this mixture over the noodles and vegetables, tossing everything to ensure even distribution and to coat the noodles nicely.

              Finish and Serve: Sauté everything together for another 2-3 minutes, allowing the flavors to meld. Adjust seasoning with extra salt, pepper, or soy sauce as needed. Garnish with chopped green onions and a sprinkle of sesame seeds.
