8 oz chickpea pasta (or any pasta of choice)

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

Zest and juice of 1 large lemon

1 cup cherry tomatoes, halved

1 cup fresh basil leaves, chopped

1/4 cup grated Parmesan cheese (optional)

Salt and pepper, to taste

Toasted pine nuts, for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the chickpea pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant. If using red pepper flakes, add them at this stage for a little heat.

      Combine Ingredients: Add the cherry tomatoes, lemon zest, and lemon juice to the skillet. Cook for about 3-4 minutes, until the tomatoes are slightly softened.

        Mix the Pasta: Add the cooked pasta to the skillet, tossing to combine. Use the reserved pasta water to create a silky sauce, adding a little at a time until the desired consistency is reached.

          Add Fresh Basil: Stir in the chopped basil and mix well. Season with salt and pepper to taste. If using Parmesan, fold it in during this step for creaminess.
