4 bone-in, skin-on chicken thighs

2 tbsp olive oil

1 tbsp fresh thyme leaves

1 tbsp fresh rosemary, chopped

4 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

Salt and pepper to taste

For the Lemon Basil Couscous:

1 cup couscous

1 ¼ cups vegetable or chicken broth

1 tbsp olive oil

2 tbsp fresh lemon juice

Zest of 1 lemon

½ cup fresh basil leaves, chopped

Salt and pepper to taste

Optional: Cherry tomatoes, halved (for garnish)

Instructions
 

Marinate the Chicken:

    - In a large mixing bowl, combine olive oil, thyme, rosemary, garlic, lemon zest, lemon juice, salt, and pepper. Add the chicken thighs to the marinade, ensuring they are well coated. Let the chicken marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator.
