Lemon Garlic Chicken Pasta with Broccoli

2 boneless, skinless chicken breasts

8 oz fettuccine or pasta of choice

2 cups broccoli florets

4 cloves garlic, minced

1 lemon (zested and juiced)

1/4 cup olive oil

1/4 cup grated Parmesan cheese

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. During the last 3 minutes of cooking, add the broccoli florets. Drain and set aside, reserving 1 cup of pasta water.

    Prepare the Chicken: While the pasta cooks, season both sides of the chicken breasts with salt, pepper, and half of the lemon zest. In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove from skillet and let rest before slicing into strips.

      Sauté Garlic and Combine: In the same skillet, reduce the heat to low and add the remaining olive oil. Add minced garlic and sauté until fragrant, about 1-2 minutes. Be careful not to let it burn.

        Add Lemon Juice: Pour in the lemon juice and stir to combine. Add the red pepper flakes if using. Gradually add the reserved pasta water, mixing well to create a light sauce.

          Combine All Ingredients: Add the drained pasta and broccoli back into the skillet. Toss everything together until well combined with the lemon-garlic sauce. Add the sliced chicken on top.

            Finish & Serve: Sprinkle grated Parmesan cheese, the remaining lemon zest, and freshly chopped parsley over the dish. Toss gently to combine. Adjust seasoning with extra salt and pepper if needed.

              Garnish and Enjoy: Plate the pasta while hot, ensuring a good amount of chicken and broccoli in each serving. Garnish with additional parsley and Parmesan if desired. Serve immediately for a delicious, zesty meal!
