2 medium zucchinis, spiralized into noodles (zoodles)

1 pound boneless, skinless chicken breasts

2 tablespoons olive oil, divided

4 cloves garlic, minced

Juice and zest of 1 large lemon

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

1 cup cherry tomatoes, halved

¼ cup fresh parsley, chopped

Optional: Grated Parmesan cheese for serving

Prepare the Chicken: Season the chicken breasts with salt, pepper, oregano, and thyme. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 6-7 minutes per side, or until cooked through and golden brown. Once done, remove from skillet and let rest for a few minutes before slicing.

    Sauté the Garlic: In the same skillet, add the remaining tablespoon of olive oil. Lower the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant, but do not let it brown.
