Lemon Garlic Shrimp and Asparagus Pasta

8 ounces linguine or spaghetti

1 pound large shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

4 cloves garlic, minced

1/4 cup olive oil

1/2 teaspoon red pepper flakes (adjust to taste)

Zest and juice of 1 large lemon

1/4 cup freshly grated Parmesan cheese

Salt and freshly ground black pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add linguine or spaghetti and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta cooking water.

    Sauté the Asparagus: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the asparagus pieces and sauté for about 4-5 minutes until they start to soften but remain crisp. Remove from the skillet and set aside.

      Cook the Shrimp: In the same skillet, add another 2 tablespoons of olive oil. Add the minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant. Add the shrimp and season with salt and pepper. Cook for 2-3 minutes on each side until the shrimp turn pink and opaque.

        Combine Ingredients: Return the asparagus to the skillet with the shrimp. Add the cooked pasta, lemon zest, lemon juice, and reserved pasta water. Toss well to combine, allowing the sauce to coat the pasta and heat everything through.

          Finish and Serve: Remove from heat and stir in the grated Parmesan cheese, adjusting seasoning with additional salt and pepper as needed. Garnish with fresh parsley before serving.
