Ingredients
  

1 cup orzo pasta

1 lb shrimp, peeled and deveined

4 cloves garlic, minced

1 lemon (zested and juiced)

2 tablespoons olive oil

1 cup vegetable or chicken broth

1/2 cup cherry tomatoes, halved

1/4 cup Parmesan cheese, grated

2 tablespoons fresh parsley, chopped

Salt and pepper to taste

Optional: red pepper flakes for heat

Cook the Orzo: In a medium pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.

      Add the Shrimp: Toss in the shrimp and season with salt and pepper. Cook for 2-3 minutes on one side until they start to turn pink, then flip them over.

        Lemon Zest & Juice: Once the shrimp are nearly done, add the lemon zest and juice, continuing to cook for an additional 1-2 minutes until the shrimp are cooked through.

          Combine: Reduce the heat to low, and add the cooked orzo and cherry tomatoes to the skillet. Pour in the broth, stirring everything together until well combined. Allow to heat through for 2-3 minutes.

            Finishing Touches: Remove from heat and stir in the grated Parmesan cheese and chopped parsley. If you enjoy a bit of heat, sprinkle some red pepper flakes on top.
