Ingredients

1 pound large raw shrimp, peeled and deveined

3 tablespoons olive oil

3 cloves garlic, minced

Zest and juice of 1 large lemon

1 teaspoon red pepper flakes (adjust to taste)

1 teaspoon smoked paprika

Salt and pepper, to taste

Skewers (wooden or metal)

Fresh parsley, chopped for garnish

Lemon wedges for serving

Instructions

Prepare the Shrimp: If using wooden skewers, soak them in water for 30 minutes to prevent burning. In a large mixing bowl, combine the shrimp, olive oil, minced garlic, lemon zest, lemon juice, red pepper flakes, smoked paprika, salt, and pepper. Toss until the shrimp are well coated in the marinade.

Marinate: Allow the shrimp to marinate in the refrigerator for at least 20 minutes (up to 2 hours for more flavor).

Assemble Skewers: Preheat your grill or grill pan over medium-high heat. Thread the marinated shrimp onto the skewers, about 5-6 shrimp per skewer, leaving a small gap between each shrimp for even cooking.

Grill the Skewers: Place the skewers on the grill and cook for 2-3 minutes per side, until the shrimp are pink and opaque, being careful not to overcook them.

Garnish and Serve: Remove the skewers from the grill. Sprinkle freshly chopped parsley over the shrimp for a burst of color and flavor. Serve with lemon wedges on the side for extra citrus zing.
