Lemon Herb Grilled Shrimp

Ingredients
  

1 pound large shrimp, peeled and deveined

1/4 cup olive oil

Zest and juice of 2 large lemons

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped

2 tablespoons fresh cilantro, chopped

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Lemon wedges, for serving

Prepare the Marinade: In a medium mixing bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, chopped parsley, chopped cilantro, dried oregano, red pepper flakes, salt, and pepper until well combined.

    Marinate the Shrimp: Add the peeled and deveined shrimp to the marinade. Toss to coat the shrimp evenly, then cover the bowl with plastic wrap and refrigerate for about 30 minutes to 1 hour for optimal flavor.

      Preheat the Grill: Preheat your grill to medium-high heat, around 375°F to 400°F (190°C to 200°C). If using wooden skewers, soak them in water for about 15 minutes to prevent burning.

        Skewer the Shrimp: Once the shrimp have marinated, thread them onto skewers, about 4-5 shrimp per skewer. This keeps them secure while grilling.

          Grill the Shrimp: Lightly oil the grill grates or use a grill basket to prevent sticking. Place the shrimp skewers on the grill and cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque. Be careful not to overcook them!
