Lemon Pepper Chicken and Broccoli Rice

For the Lemon Pepper Chicken:

4 boneless, skinless chicken breasts

2 tablespoons olive oil

2 tablespoons fresh lemon juice (about 1 lemon)

1 teaspoon lemon zest

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon freshly ground black pepper

1 teaspoon salt

Fresh parsley for garnish (optional)

For the Broccoli Rice:

2 cups broccoli florets

1 cup uncooked long-grain rice (white or brown)

2 cups chicken broth or vegetable broth

1 tablespoon olive oil

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

Juice of 1/2 lemon

1/4 cup grated Parmesan cheese (optional)

Instructions
 

Marinate the Chicken:

    In a medium bowl, combine olive oil, lemon juice, lemon zest, garlic powder, onion powder, black pepper, and salt. Whisk to combine. Add the chicken breasts into the marinade, making sure they are well-coated. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for enhanced flavor.

      Cook the Broccoli Rice:

        a. Begin by pulsing the broccoli florets in a food processor until they resemble rice-sized pieces. Alternatively, chop finely by hand.

          b. In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.

            c. Add the uncooked rice and stir, allowing it to toast slightly for about 1-2 minutes.

              d. Pour in the chicken broth, and add salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer according to the rice package instructions (typically 15-20 minutes).

                e. In the last 5 minutes of cooking, stir in the prepared broccoli rice. Cover and finish cooking until the rice is tender and the broccoli is vibrant green.

                  f. Remove from heat, squeeze in the juice of half a lemon, and stir in Parmesan cheese if using. Set aside.

                    Cook the Chicken:

                      Heat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off. Add the chicken breasts to the pan and cook for about 5-7 minutes on each side or until they reach an internal temperature of 165°F (75°C) and have nice grill marks.

                        Serve:
