For the Lemon Pepper Tilapia:

4 tilapia fillets

2 tablespoons olive oil

1 lemon (zested and juiced)

1 teaspoon black pepper

1 teaspoon sea salt

1 garlic clove, minced

Fresh parsley, chopped (for garnish)

For the Garlic Spinach:

4 cups fresh spinach leaves

2 tablespoons olive oil

2 garlic cloves, minced

Salt and pepper to taste

A squeeze of lemon juice (optional)

Marinate the Tilapia: In a mixing bowl, combine the olive oil, lemon zest, lemon juice, black pepper, sea salt, and minced garlic. Add the tilapia fillets and let them marinate for at least 15 minutes while you prepare the spinach.

    Sauté the Spinach: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once the oil shimmers, add the minced garlic and sauté for about 30 seconds until fragrant. Add the fresh spinach and a pinch of salt and pepper. Cook for 2-3 minutes, stirring frequently, until the spinach is wilted. Optionally squeeze some additional lemon juice over the spinach for added flavor. Remove from heat and set aside.

      Cook the Tilapia: In the same skillet (you can wipe it clean if needed), heat the remaining olive oil over medium-high heat. Once hot, gently place the marinated tilapia fillets in the skillet. Cook for about 3-4 minutes on each side or until the fish flakes easily with a fork and is golden brown.
