1 lb pizza dough (store-bought or homemade)

1 cup ricotta cheese

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

Zest of 2 lemons

3 tablespoons fresh lemon juice

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1/2 cup arugula (for topping)

Lemon slices (for garnish)

Optional: crushed red pepper flakes for a kick

Preheat the Oven: Preheat your oven to 475°F (245°C) or the highest setting available. If you have a pizza stone, place it in the oven to heat.

    Prepare the Dough: On a lightly floured surface, stretch or roll out your pizza dough to your desired thickness. For a crispier crust, aim for a thin base.

      Make the Sauce: In a bowl, mix the ricotta cheese, lemon zest, lemon juice, olive oil, salt, and black pepper until well combined.
