Lemon Poppy Seed Mini Muffins

1 cup all-purpose flour

1/2 cup granulated sugar

1 tablespoon poppy seeds

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 large egg

1/2 cup plain Greek yogurt

1/4 cup vegetable oil

1 tablespoon lemon zest (about 1 lemon)

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

Optional: Powdered sugar for dusting

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a mini muffin tray with paper liners or lightly grease it.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, poppy seeds, baking powder, baking soda, and salt until well combined.

      Prepare Wet Ingredients: In another bowl, beat the egg and then add the Greek yogurt, vegetable oil, lemon zest, lemon juice, and vanilla extract. Mix until the mixture is smooth and creamy.
