Lemon & Salmon Salad Bowl

2 salmon fillets (6 oz each)

4 cups mixed greens (arugula, spinach, and kale)

1 cup cherry tomatoes, halved

1 avocado, diced

1/2 cucumber, thinly sliced

1/4 red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup olives (black or green), pitted and sliced

1/4 cup extra virgin olive oil

Juice of 2 lemons

1 teaspoon Dijon mustard

1 teaspoon honey

Salt and pepper, to taste

Fresh parsley or dill, for garnish (optional)

Instructions
 

Cook the Salmon: Preheat your oven to 400°F (200°C). Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil, and season with salt and pepper. Bake for 12-15 minutes, or until the salmon flakes easily with a fork. Remove from the oven and let it cool slightly.
