Ingredients
  

2 cups plain Greek yogurt

1/2 cup fresh lemon juice (about 3-4 lemons)

1/2 cup honey or maple syrup (adjust for sweetness)

Zest of 2 lemons

1/4 cup water (optional, for a lighter texture)

Pinch of salt

Fresh mint leaves (for garnish, optional)

Instructions
 

In a large mixing bowl, combine the Greek yogurt, fresh lemon juice, honey (or maple syrup), lemon zest, and a pinch of salt.

    Whisk the mixture together until it is smooth and well-blended. Taste and adjust sweetness if necessary by adding more honey or maple syrup.

      If you prefer a lighter texture, slowly stir in the water until the desired consistency is reached.

        Pour the yogurt mixture into popsicle molds, leaving a little space at the top as the mixture will expand when frozen.

          Insert the popsicle sticks and place the molds in the freezer. Freeze for at least 4-6 hours, or until completely solid.

            To remove the popsicles from the molds, run them under warm water for a few seconds to loosen them up.

              Serve immediately, garnished with fresh mint leaves if desired. Enjoy your refreshing treat!
