2 ripe avocados, peeled and pitted

1 large cucumber, peeled and roughly chopped

2 cups ripe tomatoes, chopped (or 1 can diced tomatoes)

1 small red onion, finely chopped

2 cloves garlic, minced

1/4 cup fresh lime juice (about 2 limes)

1/2 teaspoon ground cumin

2 cups vegetable broth (cold)

Salt and pepper to taste

Fresh cilantro or parsley for garnish

Optional: 1 small jalapeño, chopped (for heat)

Optional: 1 cup corn (fresh or canned, drained)

Instructions
 

Prepare the Ingredients: Start by prepping all your ingredients. Chop the avocados, cucumber, tomatoes, and red onion, and mince the garlic. If using jalapeño and corn, prepare those too.

    Blend the Base: In a high-speed blender, combine the avocados, cucumber, tomatoes, red onion, garlic, lime juice, ground cumin, and vegetable broth. If you desire some heat, add the chopped jalapeño at this stage.

      Blend Until Smooth: Secure the lid and blend on high until the mixture is completely smooth and creamy. Stop to scrape down the sides if necessary to ensure everything gets blended well.

        Season It Right: Taste the gazpacho and season with salt and pepper to your liking. Add more lime juice if you prefer a tangier flavor.

          Chill: Transfer the gazpacho into a bowl or container and refrigerate for at least 30 minutes to allow the flavors to meld and to serve it cold.
