1 ½ cups rolled oats

1 cup almond flour (or your preferred flour)

½ cup honey or maple syrup

1 cup plain Greek yogurt

1 large lemon (zested and juiced)

1 teaspoon vanilla extract

1 teaspoon baking powder

½ teaspoon salt

1 cup fresh blueberries (plus extra for topping, if desired)

Optional: ¼ cup chopped nuts (e.g., almonds or walnuts) for added crunch

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan or line it with parchment paper for easy removal.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, baking powder, and salt. Stir until well mixed.

      Prepare Wet Ingredients: In a separate bowl, mix together the Greek yogurt, honey (or maple syrup), lemon zest, lemon juice, and vanilla extract until smooth and creamy.

        Combine Ingredients: Pour the wet ingredients into the dry ingredients. Mix until just combined. Gently fold in the blueberries and nuts (if using), being careful not to crush the blueberries.

          Spread Mixture: Transfer the mixture to the prepared baking pan. Spread it evenly with a spatula or the back of a spoon. If desired, sprinkle some extra blueberries on top for added presentation.
