2 lbs russet potatoes, peeled and cubed

1/2 cup unsalted butter, room temperature

1/2 cup sour cream

1/2 cup cream cheese, softened

1/2 cup milk (more if needed)

1 cup shredded sharp cheddar cheese

3/4 cup crispy bacon bits

1/4 cup green onions, chopped

Salt and pepper to taste

1/2 teaspoon garlic powder (optional)

1/4 teaspoon smoked paprika (for garnish, optional)

Instructions
 

Boil the Potatoes: In a large pot, add the cubed potatoes and cover them with cold water. Add a pinch of salt and bring to a boil over high heat. Once boiling, reduce to medium heat and simmer for about 15-20 minutes, or until the potatoes are tender and easily pierced with a fork.

    Drain and Steam Dry: Drain the potatoes and return them to the pot. Allow them to sit for a couple of minutes to steam dry. This will help achieve a fluffier texture.

      Mash the Potatoes: Using a potato masher or electric mixer, mash the potatoes until smooth and creamy. If using an electric mixer, be careful not to overbeat them to avoid a gluey texture.

        Mix in the Ingredients: Add the unsalted butter, sour cream, cream cheese, and milk to the mashed potatoes. Mix until fully combined and creamy. If the mixture is too thick, gradually add more milk until you reach your desired consistency.

          Fold in the Flavors: Gently fold in the shredded cheddar cheese, crispy bacon bits, and chopped green onions. Season with salt, pepper, and garlic powder (if using). Taste and adjust seasoning as needed.

            Serve and Garnish: Transfer the loaded mashed potatoes to a serving dish. For a finishing touch, sprinkle with smoked paprika and additional green onions. Optionally, you can add more cheese or bacon on top.
