1 medium head of cauliflower (about 4 cups riced)

1 large egg

2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup pizza sauce (for dipping)

Optional toppings: sliced olives, pepperoni, or additional cheese

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Cauliflower: Remove the leaves and stem from the cauliflower and cut it into florets. Place the florets in a food processor and pulse until they resemble rice-sized pieces.

      Cook the Cauliflower: Transfer the riced cauliflower to a microwave-safe bowl. Cover it with a microwave-safe lid or plastic wrap and microwave for 5-7 minutes until soft. Allow to cool for a few minutes.

        Extract Moisture: Once the cauliflower is cool enough to handle, wrap it in a clean kitchen towel or cheesecloth and wring out as much moisture as possible. This step is crucial to avoid soggy breadsticks.

          Mix the Dough: In a large mixing bowl, combine the riced, drained cauliflower, egg, mozzarella cheese, Parmesan cheese, garlic powder, oregano, Italian seasoning, salt, and black pepper. Mix until fully combined and a dough forms.

            Shape the Breadsticks: Transfer the dough onto the prepared baking sheet. With your hands or a spatula, shape the dough into a rectangle about 1/2 inch thick.

              Bake the Base: Place the baking sheet in the oven and bake for 15-20 minutes, or until the edges are golden brown and the center is set.
