Ingredients

2 ripe mangoes, peeled and diced

1 large ripe avocado, diced

1 red bell pepper, finely chopped

1 small red onion, finely chopped

1 jalapeño pepper, seeds removed and minced (adjust to taste)

1/4 cup fresh cilantro leaves, chopped

Juice of 2 limes

Salt and pepper to taste

Tortilla chips (store-bought or homemade)

Instructions

Prepare the Ingredients: In a large mixing bowl, combine the diced mangoes and diced avocado. Make sure the avocado is ripe but firm for the best texture.

Add Vegetables: Gently fold in the finely chopped red bell pepper, red onion, and minced jalapeño. Careful not to mash the avocado while mixing.

Season the Salsa: Add the chopped cilantro to the bowl, followed by the fresh lime juice. Stir to coat all the ingredients evenly. Season with salt and pepper to taste.

Taste & Adjust: Give the salsa a taste and adjust the seasoning or lime juice if needed. The balance of sweetness from the mango and acidity from the lime should shine through.

Chill: Cover the bowl with plastic wrap and let the salsa sit in the refrigerator for at least 30 minutes. This allows the flavors to meld beautifully.

Prepare the Chips (Optional): If making homemade tortilla chips, preheat your oven to 350°F (175°C). Cut corn tortillas into triangles, lightly coat with olive oil, and bake for about 10-12 minutes or until crispy and golden, flipping halfway through.

Serve: Serve the chilled mango avocado salsa in a bowl alongside the tortilla chips for dipping. Enjoy the vibrant flavors and textures!
