2 ripe mangoes, peeled and diced

1 cup fresh blackberries

1 cup Greek yogurt (plain or vanilla)

1/2 cup granola (your choice, sweetened or unsweetened)

2 tablespoons honey or maple syrup (optional)

1 teaspoon vanilla extract (optional)

Fresh mint leaves for garnish

Prepare the Fruit: Start by peeling and dicing the mangoes into small, bite-sized pieces. Rinse the blackberries gently under cold water and allow them to dry on a paper towel.

    Sweeten the Yogurt (Optional): In a medium mixing bowl, combine Greek yogurt with honey or maple syrup and vanilla extract (if using). Stir well until the mixture is smooth and sweetened to your preference.

      Layer the Parfaits: In your parfait cups or glasses, start with a layer of sweetened yogurt. Use about 1/4 of the yogurt mixture for each parfait.

        Add Mango: Top the yogurt layer with a generous layer of diced mangoes. Use half of the mangoes for the first layer.

          Add Blackberries: Next, add a layer of fresh blackberries over the mangoes. Use half of the blackberries for the first layer.

            Repeat Layers: Repeat the process with another layer of yogurt, remaining mangoes, and blackberries. Finish with a final layer of yogurt on top.

              Add Granola: Sprinkle a handful of granola over the top to add a crunchy texture.

                Garnish: Finally, garnish each parfait with fresh mint leaves for a pop of color and freshness.

                  Serve: If desired, refrigerate the parfaits for about 15-30 minutes for a chilled treat or serve immediately!
