3 cups old-fashioned rolled oats

1 cup mixed nuts (walnuts, almonds, pecans), roughly chopped

1/2 cup sunflower seeds

1/2 cup maple syrup

1/4 cup coconut oil, melted

2 teaspoons ground cinnamon

1/4 teaspoon salt

1/2 cup dried fruit (raisins, cranberries, or cherries), optional

1/2 teaspoon vanilla extract

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, chopped nuts, sunflower seeds, cinnamon, and salt. Stir well to evenly distribute the dry ingredients.

      Combine Wet Ingredients: In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until well combined.

        Combine Wet and Dry: Pour the wet mixture over the dry ingredients and stir until everything is evenly coated. If you’re adding dried fruits, toss them in after mixing.

          Form Clusters: Take a handful of the mixture and press it tightly together to form clusters. Place the clusters on the prepared baking sheet, leaving space between them for even baking.

            Bake: Bake in the preheated oven for 25-30 minutes, or until golden brown, stirring halfway through to ensure even cooking. Keep an eye on them towards the end to prevent burning.
