Ingredients

1 lb Brussels sprouts, trimmed and halved

3 tablespoons olive oil

3 tablespoons pure maple syrup

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon salt

½ teaspoon black pepper

¼ cup chopped pecans (optional, for crunch)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the Brussels Sprouts: In a large mixing bowl, add the halved Brussels sprouts. Drizzle with olive oil, and sprinkle with salt, pepper, and garlic powder. Toss everything together until the Brussels sprouts are evenly coated.

Make the Maple Dijon Sauce: In a small bowl, whisk together the maple syrup, Dijon mustard, and apple cider vinegar until smooth.

Combine and Toss: Pour the Maple Dijon mixture over the Brussels sprouts. Toss again to ensure the sprouts are fully coated in the sauce.

Spread on Baking Sheet: Transfer the coated Brussels sprouts to the prepared baking sheet, arranging them in a single layer for even roasting.

Roast the Brussels Sprouts: Place the baking sheet in the preheated oven and roast for about 20-25 minutes or until the Brussels sprouts are crispy on the outside and tender on the inside, stirring halfway through for even cooking.

Add Pecans: If using, add chopped pecans to the baking sheet during the last 5 minutes of roasting to lightly toast them.

Serve: Once done, remove from the oven, and garnish with freshly chopped parsley for a pop of color. Serve warm and enjoy the delicious blend of sweet and tangy flavors!
