Maple Pecan Pie

For the crust:

1 ½ cups all-purpose flour

½ cup unsalted butter (cold, cut into cubes)

¼ cup granulated sugar

1 large egg yolk

3-4 tablespoons cold water

1/4 teaspoon salt

For the filling:

1 cup pecans (chopped, plus extra for topping)

1 cup pure maple syrup

¼ cup brown sugar

2 large eggs

2 tablespoons unsalted butter (melted)

1 teaspoon vanilla extract

¼ teaspoon salt

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

Instructions
 

Prepare the crust: In a large mixing bowl, combine flour and salt. Add the cold butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. Stir in the sugar.

    In a small bowl, whisk together the egg yolk and 3 tablespoons of cold water. Gradually add this to the flour mixture, stirring until the dough starts to come together. If needed, add a little more water (1 teaspoon at a time).

      Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

        Preheat the oven: Preheat your oven to 350°F (175°C).

          Roll out the crust: On a floured surface, roll out the chilled dough into a circle that fits a 9-inch pie pan. Transfer the crust to the pie pan, trim the excess edges, and crimp or fork the edges. Prick the bottom with a fork to prevent bubbling.

            Blind bake the crust: Line the crust with parchment paper and fill with pie weights or dried beans. Bake for about 15 minutes. Remove the parchment and weights, then bake for an additional 5 minutes until lightly golden. Allow to cool.

              Prepare the filling: In a medium mixing bowl, whisk together the maple syrup, brown sugar, eggs, melted butter, vanilla extract, salt, ground cinnamon, and nutmeg until well combined.

                Stir in the chopped pecans.

                  Assemble the pie: Pour the filling into the cooled crust, spreading it evenly. Decorate the top with additional pecans if desired.

                    Bake the pie: Place the pie in the preheated oven and bake for 30-35 minutes, or until the filling is set and slightly puffed up. The pie should still have a slight jiggle in the center.

                      Cool and serve: Remove from the oven and allow to cool on a wire rack for at least 1 hour before slicing. The pie is best served warm or at room temperature, optionally with a scoop of vanilla ice cream on top.
