1 large acorn squash

3 tablespoons olive oil

4 tablespoons pure maple syrup

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1/4 cup chopped pecans (optional)

Fresh thyme leaves (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Squash: Carefully cut the acorn squash in half from stem to bottom. Scoop out the seeds and stringy flesh using a spoon. Cut each half into 1-inch thick rings. You should have 5-6 rings.

      Make the Glaze: In a small bowl, whisk together the olive oil, maple syrup, ground cinnamon, nutmeg, sea salt, and black pepper until well combined.

        Coat the Squash: Place the squash rings on a large baking sheet lined with parchment paper. Brush each ring generously with the maple glaze, ensuring they are well coated.
