Maple Roasted Beets with Feta

4 medium-sized beets

2 tbsp olive oil

2 tbsp pure maple syrup

1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)

Salt and pepper to taste

1/2 cup crumbled feta cheese

1/4 cup walnuts, roughly chopped (optional)

Fresh parsley for garnish (optional)

Instructions
 

Prepare the Beets: Preheat your oven to 400°F (200°C). Scrub the beets under running water to remove any dirt. Trim off the tops and tails, then wrap each beet individually in aluminum foil.

    Roast the Beets: Place the wrapped beets on a baking sheet and roast in the preheated oven for about 45–60 minutes or until they are tender when pierced with a fork. The exact time will depend on the size of your beets.

      Cool and Peel: Once done, carefully unwrap the beets (steam will escape), and allow them to cool for about 10 minutes. Once cool enough to handle, rub the skins off with your fingers or a paper towel (they should slip off easily).

        Cube the Beets: Cut the peeled beets into bite-sized cubes and place them in a mixing bowl.

          Dress the Beets: In a small bowl, whisk together the olive oil, maple syrup, fresh thyme, salt, and pepper. Drizzle this dressing over the cubed beets and gently toss to coat.

            Bake Again: Spread the dressed beets onto a parchment-lined baking sheet in a single layer. Roast in the oven for an additional 15–20 minutes, until caramelized and heated through.

              Assemble the Salad: Once out of the oven, transfer the roasted beets to a serving plate. Scatter crumbled feta cheese and chopped walnuts (if using) on top.
