1 lb maple breakfast sausage (bulk or casings removed)

1 medium sweet potato, peeled and diced into 1/2-inch cubes

1 red bell pepper, diced

1 small onion, diced

2 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp ground cinnamon

Salt and pepper to taste

3 eggs (optional for topping)

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

1/4 cup shredded cheddar cheese (optional)

Instructions
 

Cook the Sausage: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the maple sausage and cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes. Remove the sausage from the pan and set aside, leaving the drippings.

    Sauté the Vegetables: In the same skillet, add another tablespoon of olive oil. Toss in the diced sweet potato and cook for about 5 minutes, stirring occasionally until they start to soften.
