Mashed Potatoes Stuffed with Cheese & Beef

For the Mashed Potatoes:

2 lbs (about 1 kg) Russet potatoes, peeled and quartered

4 tbsp unsalted butter

½ cup heavy cream

Salt and pepper, to taste

For the Beef Filling:

1 lb (450g) ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp Worcestershire sauce

1 tsp dried Italian seasoning

Salt and pepper, to taste

1 cup shredded cheddar cheese (or cheese of your choice)

For Breading:

1 cup all-purpose flour

2 large eggs, beaten

2 cups breadcrumbs

Oil for frying

Instructions
 

Prepare the Mashed Potatoes:

    - Place the quartered potatoes in a large pot and cover them with cold water. Add a generous pinch of salt.

      - Bring to a boil over high heat, then reduce to a simmer. Cook until the potatoes are fork-tender (about 15-20 minutes).

        - Drain the potatoes and return them to the pot. Add the butter and heavy cream, then mash until smooth. Season with salt and pepper. Allow cooling slightly.

          Cook the Beef Filling:

            - In a skillet over medium heat, add a splash of oil and sauté the chopped onion until translucent (about 3-4 minutes).

              - Add the minced garlic and cook for another minute.

                - Add the ground beef and cook until browned, breaking it apart with a spoon (about 5-7 minutes). Drain any excess fat.

                  - Stir in Worcestershire sauce, dried Italian seasoning, salt, and pepper. Cook for an additional minute. Remove from heat and let cool slightly.

                    - Once cool, stir in the shredded cheese.

                      Assemble the Mashed Potato Bombs:

                        - Take a portion of the mashed potatoes (about ⅓ cup) and flatten it in the palm of your hand.

                          - Place a tablespoon of the beef and cheese filling in the center, then wrap the mashed potato around the filling, sealing it carefully to form a ball.

                            - Repeat this process until all potatoes and filling are used.

                              Bread the Bombs:

                                - Set up a breading station with three shallow bowls: one with flour, another with beaten eggs, and the last with breadcrumbs.

                                  - Roll each stuffed potato bomb first in flour, then dip it in the egg, and finally coat it in breadcrumbs. Ensure they are fully covered.

                                    Fry the Bombs:

                                      - In a large pot or deep fryer, heat oil to 350°F (175°C).

                                        - Carefully add a few potato bombs at a time, frying until golden brown and crispy (about 4-5 minutes). Do not overcrowd the pot.

                                          - Remove with a slotted spoon and drain on paper towels. Repeat until all are cooked.

                                            Serve:

                                              - These cheesy beef-stuffed mashed potato bombs are best served hot. You can accompany them with sour cream, chives, or your favorite dipping sauce.
