8 oz fusilli pasta

2 cups cooked chicken breast, diced

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 tablespoon lemon juice

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fusilli pasta according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Veggies: While the pasta is cooking, chop the cherry tomatoes, cucumber, red onion, and slice the Kalamata olives.

      Make the Dressing: In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, dried oregano, salt, and pepper until well combined.

        Combine Ingredients: In a large bowl, combine the cooked pasta, diced chicken, chopped vegetables (cherry tomatoes, cucumber, red onion, olives), and crumbled feta cheese.

          Dress the Salad: Pour the prepared dressing over the pasta salad and gently toss to coat everything evenly.

            Add Fresh Herbs: Sprinkle the chopped fresh parsley over the salad and give it one more gentle toss.

              Chill and Serve: Let the salad chill in the refrigerator for at least 30 minutes to allow the flavors to meld. Serve cold or at room temperature.
