Mediterranean Chicken Wraps

2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper, to taste

4 large whole wheat or spinach tortillas

1 cup fresh spinach leaves

1 cup cherry tomatoes, halved

1 cucumber, diced

½ red onion, thinly sliced

½ cup Kalamata olives, pitted and sliced

½ cup feta cheese, crumbled

½ cup tzatziki sauce (store-bought or homemade)

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, dried oregano, garlic powder, salt, and pepper. Add the chicken breasts to the marinade, ensuring they're well coated. Let them marinate for at least 30 minutes (or up to 2 hours for more flavor) in the fridge.

    Cook the Chicken: Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and juices run clear. Remove the chicken from the grill and let it rest for a few minutes before slicing into strips.

      Prepare the Wrap Filling: In a large bowl, combine the fresh spinach leaves, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese. Toss gently to mix.

        Assemble the Wraps: Lay out the tortillas on a flat surface. Spread a generous spoonful of tzatziki sauce onto each tortilla. Top with a portion of the chicken strips followed by the vegetable and feta mixture.

          Wrap it Up: Fold in the sides of the tortilla then roll from the bottom up, securing the filling tightly. Repeat with the remaining tortillas.

            Serve: Slice the wraps diagonally and serve with extra tzatziki on the side for dipping!
