Mediterranean Chickpea and Spinach Wraps

1 can (15 oz) chickpeas, drained and rinsed

2 cups fresh spinach, washed and roughly chopped

1/2 cup red bell pepper, finely chopped

1/4 cup red onion, finely chopped

1/2 cup cucumber, diced

1/4 cup feta cheese, crumbled

1/4 cup tahini sauce

2 tablespoons fresh lemon juice

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

4 large whole wheat tortillas or wraps

Fresh parsley for garnish (optional)

Instructions
 

Prepare the Chickpea Mixture: In a large mixing bowl, add the drained chickpeas and lightly mash them with a fork or potato masher until they are mostly smashed but still have some whole pieces for texture.

    Add Vegetables: To the mashed chickpeas, stir in the chopped spinach, red bell pepper, red onion, cucumber, and feta cheese. Mix until well combined.

      Make the Dressing: In a separate small bowl, whisk together the tahini sauce, fresh lemon juice, garlic powder, cumin, salt, and pepper. If the sauce is too thick, feel free to add a tablespoon of water to achieve your desired consistency.

        Combine Dressing and Chickpeas: Pour the tahini dressing over the chickpea and vegetable mixture. Stir well to ensure everything is evenly coated.

          Assemble the Wraps: Place a generous scoop of the chickpea mixture in the center of each tortilla. Fold in the sides and roll the wrap tightly from the bottom to the top.

            Serve: Slice each wrap in half, garnish with fresh parsley if desired, and serve immediately. These wraps can also be enjoyed cold or at room temperature.
