Mediterranean Quesadillas

4 large whole wheat tortillas

1 cup hummus (store-bought or homemade)

1 cup crumbled feta cheese

1 cup roasted red peppers (jarred or homemade), chopped

1 cup fresh spinach, chopped

½ cup Kalamata olives, pitted and sliced

1 cup shredded mozzarella cheese

2 tablespoons extra virgin olive oil

1 teaspoon dried oregano

Salt and pepper to taste

Tzatziki sauce (for serving)

Prepare the Filling: In a mixing bowl, combine crumbled feta cheese, roasted red peppers, chopped spinach, Kalamata olives, and oregano. Season with salt and pepper to taste.

    Spread the Hummus: Take one tortilla and spread about ¼ cup of hummus evenly over one side. This will be the base for your quesadilla.

      Layer the Filling: On top of the hummus, add a generous layer of the Mediterranean filling. Sprinkle a handful of shredded mozzarella cheese over the filling to help bind the quesadilla when cooked.

        Top it Off: Place another tortilla on top of the filling, pressing down gently to help it stick.

          Cook the Quesadilla: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Carefully place the quesadilla in the skillet and cook for about 3-4 minutes until the bottom is golden brown and the cheese starts to melt.

            Flip and Finish: Carefully flip the quesadilla using a spatula. Add the remaining tablespoon of olive oil, if needed, and cook the other side for an additional 3-4 minutes until golden and crispy.

              Slice and Serve: Remove the quesadilla from the skillet and let it cool for a minute. Slice into wedges and serve hot with tzatziki sauce for dipping.
