Mini Air Fryer Stuffed Pepper Boats

Ingredients
  

4 mini sweet bell peppers (red, yellow, or orange)

1 cup cooked quinoa (or rice for a different texture)

1/2 cup black beans, drained and rinsed

1/2 cup corn (canned or frozen)

1/2 cup diced tomatoes (fresh or canned)

1/4 cup red onion, finely chopped

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

1 cup shredded cheese (cheddar or a Mexican blend)

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Prepare the Bell Peppers:

    - Wash the mini bell peppers under running water. Cut them in half lengthwise and remove any seeds and membranes. Lightly brush the insides with olive oil and set aside.

      Make the Filling:

        - In a large mixing bowl, combine the cooked quinoa, black beans, corn, diced tomatoes, red onion, cumin, chili powder, garlic powder, salt, and pepper. Mix well until all ingredients are evenly distributed.

          Stuff the Peppers:

            - Carefully spoon the quinoa mixture evenly into each pepper half, packing them slightly to ensure they're filled generously.

              Add Cheese:

                - Sprinkle the shredded cheese on top of each stuffed pepper boat, ensuring they’re well-covered for that gooey, melty goodness.

                  Air Fry the Boats:

                    - Preheat your air fryer to 350°F (175°C). Place the stuffed pepper boats in the air fryer basket in a single layer. You may need to work in batches depending on the size of your air fryer.

                      - Air fry the peppers for 10-12 minutes, until the cheese is melted and bubbly, and the peppers are tender but still hold their shape.

                        Serve:
