Mini Bacon and Egg Tacos

6 small corn tortillas

4 slices of bacon, chopped

4 large eggs

1/4 cup shredded cheddar cheese

1/4 cup diced tomatoes

1/4 cup diced avocado

2 tablespoons chopped fresh cilantro

1 tablespoon olive oil

Salt and pepper to taste

Lime wedges, for serving

Instructions
 

Cook the Bacon: In a medium skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Remove the bacon from the skillet and place it on paper towels to drain excess fat. Leave about 1 tablespoon of bacon grease in the skillet for flavor.

    Scramble the Eggs: In the same skillet, reduce the heat to medium-low. Crack the eggs into a bowl, season with salt and pepper, and whisk until well combined. Add olive oil to the skillet, then pour in the eggs. Cook, stirring gently, until the eggs are just set but still slightly creamy, about 3-5 minutes. Remove from heat and gently fold in the cooked bacon and cheese.

      Warm the Tortillas: In a separate, dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

        Assemble the Tacos: Place a generous spoonful of the bacon and egg mixture onto each warmed tortilla. Top with diced tomatoes, avocado, and chopped cilantro.

          Serve: Squeeze fresh lime juice over the tacos and serve immediately with additional lime wedges on the side.
