Mini BBQ Chicken Zucchini Cups

Ingredients
  

2 medium zucchinis

1 cup shredded cooked chicken (rotisserie works great)

1/2 cup BBQ sauce (your choice of flavor)

1/2 cup shredded cheese (cheddar or mozzarella)

1/4 cup diced red onion

1/4 cup corn (canned or frozen, thawed)

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    Prepare the zucchinis: Slice the zucchinis in half lengthwise. Use a small spoon to scoop out the seeds and flesh, creating a little boat. Leave about 1/4 inch of zucchini on the bottom to hold the filling.

      Season the zucchini: Brush the inside of each zucchini half with olive oil and season with salt and pepper. Arrange the zucchini cups on a baking sheet, cut-side up.

        Make the filling: In a mixing bowl, combine the shredded chicken, BBQ sauce, diced red onion, corn, and half of the shredded cheese. Stir until all ingredients are well mixed.

          Fill the zucchini cups: Generously spoon the BBQ chicken mixture into each zucchini half, mounding it slightly.

            Top with cheese: Sprinkle the remaining shredded cheese over the filled zucchini boats.

              Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the zucchinis are tender and the cheese is melted and bubbly.

                Garnish and serve: Remove from the oven, let cool for a few minutes, and then garnish with fresh cilantro if desired. Serve warm as an appetizer or main dish.
