1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

½ teaspoon black pepper

1 cup milk

2 large eggs

¼ cup unsalted butter, melted

1 cup cooked breakfast sausage, crumbled (link or patties)

½ cup shredded cheddar cheese

¼ cup sliced green onions (optional)

Cooking spray or muffin liners

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). If you’re using muffin tins, lightly grease them with cooking spray or line with muffin liners.

    Combine Dry Ingredients: In a large bowl, whisk together the cornmeal, flour, baking powder, salt, and black pepper until well combined.

      Mix Wet Ingredients: In another bowl, whisk together the milk, eggs, and melted butter until frothy.

        Combine Mixtures: Pour the wet ingredients into the dry mixture, stirring gently until just combined. Do not over-mix; a few lumps are okay.

          Add Fillings: Fold in the crumbled sausage, shredded cheddar cheese, and green onions if using. Make sure the pieces are evenly distributed throughout the batter.

            Fill Muffin Tins: Spoon the batter into the prepared muffin tins, filling each cup about 2/3 full.

              Bake: Bake in the preheated oven for 15-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

                Cool and Serve: Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely. Serve warm or at room temperature.
