Mini Chicken & Spinach Skillet Cups

1 lb (450g) ground chicken

2 cups fresh spinach, chopped

1/2 cup cream cheese, softened

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon Italian seasoning

Salt and pepper, to taste

1 package of refrigerated biscuit dough

Olive oil, for greasing the skillet

Optional: Red pepper flakes, for garnish

Preheat Your Skillet: Preheat your oven to 375°F (190°C) and lightly grease a muffin skillet with olive oil.

    Cook the Chicken: In a large skillet over medium heat, add the ground chicken. Cook until browned and fully cooked, about 5-7 minutes. Drain any excess fat.

      Make the Filling: Add the chopped spinach to the skillet with the cooked chicken. Stir in the cream cheese, mozzarella, Parmesan, garlic powder, onion powder, Italian seasoning, salt, and pepper. Cook for another 3-4 minutes until the spinach is wilted and the cheeses have melted and combined with the chicken mixture. Remove from heat.

        Prepare the Dough: Open the can of refrigerated biscuit dough. Separate the biscuits and flatten each one into a circle that is about 1/4-inch thick.

          Form the Cups: Gently press each flattened biscuit into the greased muffin cups, making sure the dough covers the sides and has enough space for the filling in the center.

            Fill the Cups: Spoon the chicken and spinach filling into each biscuit cup until they're generously filled.

              Bake: Place the muffin skillet in the preheated oven and bake for 15-20 minutes, or until the biscuit edges are golden brown and the cheese is bubbly.

                Cool & Serve: Allow the cups to cool for a few minutes before carefully removing them from the skillet. Garnish with red pepper flakes, if desired, and serve warm.
