Mini Chili Quesadillas

8 small flour tortillas

1 cup cooked and shredded chicken (or canned beans for a vegetarian option)

1 cup chili (homemade or canned)

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (red and green)

1/4 cup chopped green onions

1 tsp cumin

1 tsp smoked paprika

1/2 tsp garlic powder

Cooking oil (for frying)

Sour cream and salsa for serving (optional)

Instructions
 

Prep the filling: In a mixing bowl, combine the cooked chicken (or beans), chili, half of the shredded cheese, diced bell peppers, green onions, cumin, smoked paprika, and garlic powder. Mix until well combined.

    Heat a skillet: Place a large skillet over medium heat and add a little cooking oil to coat the bottom.

      Assemble the quesadillas: Take a tortilla and place a generous scoop of the filling on one half of the tortilla. Sprinkle some of the remaining cheese on top of the filling. Fold the tortilla in half over the filling.

        Cook the quesadillas: Place the folded quesadilla in the hot skillet. Cook for about 3-4 minutes on one side, until golden brown and the cheese starts to melt. Carefully flip it over and cook the other side for another 3-4 minutes.

          Repeat: Continue with the remaining tortillas and filling, adding a little more oil as needed to prevent sticking.

            Slice and serve: Once cooked, remove the quesadillas from the skillet and let them cool for a minute. Cut into wedges and serve warm with sour cream and salsa on the side.
