8 slices of brioche bread

2 large eggs

1/2 cup milk

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

2 tablespoons maple syrup

1/4 cup all-purpose flour

1 cup mixed berries (strawberries, blueberries, raspberries)

Butter or cooking spray for the pan

Powdered sugar for dusting (optional)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Bread: Cut each slice of brioche bread into bite-sized cubes, approximately 1 inch each. Set aside.

    Make the Batter: In a large mixing bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and maple syrup until well combined.

      Coat the Cubes: Add the brioche cubes to the egg mixture and gently toss until all pieces are coated. Let sit for about 5 minutes to allow the bread to soak up the mixture.

        Add Flour: Sprinkle the flour over the soaked bread and gently fold it in to create a thicker coating.

          Preheat the Pan: Heat a large non-stick skillet or griddle over medium heat and add a little butter or cooking spray to coat the surface.

            Cook the Bites: Once hot, add the bread cubes in batches (do not overcrowd). Cook for about 3-4 minutes on each side, or until golden brown and crispy. Repeat until all bites are cooked.

              Serve with Berries: Arrange the mini french toast bites on a serving platter. Top with a generous amount of mixed berries and dust with powdered sugar if desired.
