2 chicken breasts, boneless and skinless

2 tablespoons olive oil

1 tablespoon lemon juice

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper to taste

4 whole wheat pita breads

1 cup cucumber, diced

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/2 cup feta cheese, crumbled

1/4 cup Kalamata olives, pitted and sliced

Fresh parsley, chopped (for garnish)

Tzatziki sauce (for serving)

Instructions
 

Prepare the Chicken Marinade: In a bowl, mix the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and let the chicken marinate in the refrigerator for at least 30 minutes (or up to 2 hours for better flavor).

    Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes per side or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C). Once cooked, let the chicken rest for 5 minutes, then slice into thin strips.

      Prepare the Pita Fillings: While the chicken is resting, in a large mixing bowl combine the diced cucumber, halved cherry tomatoes, sliced red onion, crumbled feta cheese, and sliced olives. Toss gently to mix.

        Assemble the Pita Pockets: Warm the pita breads in a toaster or on a dry skillet for a minute to make them pliable. Cut the pitas in half to create pockets. Stuff each pocket with sliced chicken and the vegetable-feta mixture.

          Garnish and Serve: Add a dollop of tzatziki sauce to each pita pocket, sprinkle with fresh parsley, and serve immediately. Enjoy these mini Greek chicken pita pockets warm or at room temperature!
