Ingredients

8 slices of bread (your choice: sourdough, whole grain, or white)

8 ounces of cheddar cheese, sliced

1 cup cherry tomatoes

2 tablespoons unsalted butter, softened

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

8 bamboo skewers (6 inches long)

Instructions

Prepare the Bread and Cheese:

Cut each slice of bread into quarters to create small squares. Place one square of cheese between two bread squares to make a mini sandwich. Repeat until all cheese and bread are used.

      Makesthe Garlic Butter:

In a small bowl, mix together the softened butter, garlic powder, salt, and pepper until fully combined.

          Assemble the Skewers:

Thread a cherry tomato onto the skewer, followed by a mini grilled cheese sandwich. Repeat this pattern until each skewer has 2 sandwiches and 1 tomato, finishing with a tomato.

              Preheat the Grill or Skillet:

Preheat a grill or skillet over medium heat. You can also use a grill pan for nice grill marks.

                  Grill the Skewers:

Brush the assembled skewers with the garlic butter mixture on all sides. Grill the skewers for about 3-4 minutes on each side until the bread is golden brown and crispy, and the cheese is melted.

                      Garnish and Serve:

Remove the skewers from the grill and let them cool slightly. If desired, add fresh basil leaves on top for a burst of flavor. Serve immediately with a side of marinara or your favorite dipping sauce.
