1 lb ground beef or turkey

1 cup diced hatch green chilies (fresh or roasted)

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

½ tsp chili powder

Salt and pepper to taste

12 mini corn tortillas

1 cup shredded cheddar cheese

1 cup shredded lettuce

½ cup diced tomatoes

1 avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Filling: In a large skillet, heat a splash of oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.

    Cook the Meat: Add the ground beef or turkey to the skillet, breaking it apart with a wooden spoon. Cook until browned and fully cooked, about 7-8 minutes. Drain excess fat if necessary.
