Mini Mac & Cheese Bacon Cups

1 cup elbow macaroni

2 cups shredded sharp cheddar cheese

1 cup milk

1/4 cup cream cheese, softened

1/4 cup unsalted butter

1/2 teaspoon garlic powder

1/4 teaspoon smoked paprika

Salt and pepper to taste

10 slices of cooked bacon, crumbled

1/2 cup panko breadcrumbs

Fresh chives, chopped for garnish (optional)

Preheat Oven: Start by preheating your oven to 350°F (175°C). Lightly grease a muffin tin with cooking spray or line with muffin liners for easy removal.

    Cook Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

      Make Cheese Sauce: In the same pot over medium heat, melt the unsalted butter. Stir in the cream cheese until combined, then whisk in the milk. Once the mixture is smooth, add the garlic powder, smoked paprika, salt, and pepper. Gradually add the shredded cheddar cheese, stirring continuously until the cheese is fully melted and the sauce is creamy.

        Combine: Add the cooked macaroni and crumbled bacon into the cheese sauce, stirring until everything is evenly coated.

          Assemble Cups: Spoon the mac and cheese mixture into the prepared muffin tin, filling each cup to the top. Sprinkle the panko breadcrumbs over each cup for a crunchy topping.

            Bake: Place the muffin tin in the oven and bake for 20-25 minutes, or until the tops are golden brown and crispy.
