1 ½ cups all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

½ teaspoon salt

1 cup milk

1 large egg

3 tablespoons unsalted butter, melted

½ teaspoon vanilla extract

6 slices of cooked bacon or sausage patties

3 large eggs, scrambled

Maple syrup, for drizzling

Fresh fruit (such as berries or sliced bananas), for garnish

Instructions
 

Make the Pancake Batter: In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, combine the milk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined; it’s okay if there are a few lumps.

    Cook the Mini Pancakes: Preheat a nonstick skillet or griddle over medium heat. Lightly grease with butter or cooking spray. Pour about 2 tablespoons of batter for each pancake onto the skillet. Cook for 2-3 minutes on one side or until bubbles form on top, then flip and cook for another 1-2 minutes until golden brown. Remove and keep warm. Repeat with remaining batter.

      Prepare the Eggs: In a medium bowl, whisk the eggs and season with salt and pepper. In the same skillet, add a little more butter if needed, and scramble the eggs over medium heat until just set. Remove from heat.

        Assemble the Sandwiches: Take one mini pancake and layer with a slice of bacon or sausage, a spoonful of scrambled eggs, and another mini pancake on top. Repeat this process for the remaining ingredients to create additional sandwiches.
