Mini Pizza Stuffed Mushrooms

12 large cremini or portobello mushrooms

1 cup cooked Italian sausage or pepperoni, diced

1 cup marinara sauce

1 cup shredded mozzarella cheese

1/2 cup finely chopped bell peppers (red, green, or yellow)

1/4 cup finely chopped onion

1 teaspoon dried oregano

1 teaspoon dried basil

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Prepare the Mushrooms: Preheat your oven to 375°F (190°C). Clean the mushrooms with a damp cloth. Remove the stems and carefully scoop out a little of the inside to create space for the filling. Set the caps aside.

    Cook the Filling: In a skillet over medium heat, add olive oil. Sauté the chopped onion and bell peppers for about 3-4 minutes, or until they are soft and translucent. Add the cooked sausage (or pepperoni) to the skillet, and cook for another 2 minutes until heated through.

      Combine Ingredients: In a mixing bowl, combine the sautéed onion and bell pepper mixture with marinara sauce, 3/4 cup of the mozzarella cheese, oregano, basil, salt, and pepper. Mix until well combined.

        Stuff the Mushrooms: Generously fill each mushroom cap with the pizza filling mixture, pressing it down slightly to pack it in. Place the stuffed mushrooms on a baking sheet lined with parchment paper.

          Top with Cheese: Sprinkle the remaining mozzarella cheese over each stuffed mushroom cap, allowing it to melt and create a delicious, gooey topping.

            Bake: Place the baking sheet in the preheated oven and bake for about 20 minutes or until the mushrooms are tender and the cheese is bubbly and golden.

              Garnish and Serve: Remove the stuffed mushrooms from the oven. Let them cool slightly. Garnish with fresh basil leaves if desired and serve warm.
