1 cup cooked quinoa (cooled)

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1/2 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

Salt and pepper to taste

1/2 cup shredded cheddar cheese (or dairy-free alternative)

1 avocado, sliced (for topping)

Lime wedges (for serving)

Prepare the Quinoa: If you haven't cooked the quinoa yet, rinse it under cold water and cook it according to package instructions. Once cooked, let it cool.

    Mix the Base: In a large mixing bowl, combine the cooked quinoa, black beans, corn, diced red bell pepper, chopped red onion, and cilantro.

      Season: Add the ground cumin, chili powder, garlic powder, salt, and pepper. Mix well until all ingredients are evenly coated with the spices.

        Add Cheese: Fold in the shredded cheddar cheese, ensuring it is evenly dispersed throughout the mixture.

          Form the Bites: Preheat your oven to 375°F (190°C). Line a mini muffin tin with silicone or paper liners. Scoop the quinoa mixture into each cup, pressing down lightly to compact it.

            Bake: Place the muffin tin in the preheated oven and bake for about 15-20 minutes, or until the tops are lightly golden and firm.

              Cool Slightly: Remove the muffin tin from the oven and allow the quinoa bites to cool for about 5 minutes before carefully removing them from the tin.

                Serve: Top with avocado slices and squeeze fresh lime juice over the bites before serving. Enjoy with additional lime wedges on the side!
