Ingredients

1 cup fresh spinach, chopped

1 cup canned artichoke hearts, drained and chopped

1/2 cup cream cheese, softened

1/4 cup sour cream

1/4 cup mayonnaise

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 garlic clove, minced

1/4 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

1 package (1 lb) frozen puff pastry, thawed

1 egg, beaten (for egg wash)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Filling: In a mixing bowl, combine the chopped spinach, artichoke hearts, cream cheese, sour cream, mayonnaise, mozzarella cheese, Parmesan cheese, minced garlic, red pepper flakes, salt, and pepper. Mix until well blended and uniformly combined.

Roll Out the Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry sheets to about 1/8 inch thick. Cut the pastry into squares, about 3x3 inches each.

Fill the Pastry: Place a tablespoon of the spinach-artichoke mixture in the center of each pastry square. Be careful not to overfill.

Shape the Bites: Fold the corners of the square over the filling to create a bite-sized parcel. Press the corners together to seal, and place them seam-side down on the prepared baking sheet.

Apply Egg Wash: Brush the tops of the puff bites with the beaten egg to give them a golden-brown finish when baked.

Bake: Bake in the preheated oven for 15-20 minutes or until the puff pastry is golden and crispy.

Garnish and Serve: Remove from the oven and let them cool slightly. Garnish with freshly chopped parsley before serving.

Enjoy: Serve warm, and enjoy your delicious mini spinach artichoke puff bites at your next gathering or as a tasty snack!
