Mini Stuffed Bell Pepper Bites

12 mini bell peppers (red, yellow, or orange)

1 cup cooked quinoa (or rice)

1 cup black beans, drained and rinsed

1 cup corn (frozen or fresh)

1 cup diced tomatoes (canned or fresh)

1 cup shredded cheese (cheddar or Mexican blend)

1 tsp cumin

1 tsp chili powder

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper, to taste

2 tbsp fresh cilantro, chopped (for garnish)

2 tbsp olive oil (optional for drizzling)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Wash the mini bell peppers and slice them in half lengthwise. Remove the seeds and membranes. Place them cut-side up on a baking sheet lined with parchment paper.

      Make the Filling: In a large mixing bowl, combine the cooked quinoa, black beans, corn, diced tomatoes, half of the shredded cheese, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.

        Stuff the Peppers: Spoon the filling mixture into each mini bell pepper half, pressing gently to pack the mixture in. Ensure they're generously filled.

          Top with Cheese: Sprinkle the remaining shredded cheese on top of the stuffed peppers.

            Bake: Drizzle a little olive oil over the stuffed peppers for added flavor (optional). Bake in the preheated oven for about 20-25 minutes, or until the peppers are tender and the cheese is melted and bubbly.

              Garnish and Serve: Remove from the oven and let them cool for a few minutes. Garnish with freshly chopped cilantro before serving.
