Mini Taco Casserole Muffins

Ingredients
  

1 lb ground beef (or turkey)

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning mix

1 cup black beans, drained and rinsed

1 cup corn (canned or frozen)

1 cup diced bell peppers (any color)

1 cup shredded cheddar cheese

1 cup crushed tortilla chips (plus extra for topping)

4 large eggs

1 cup milk

1/2 cup salsa (plus more for serving)

Fresh cilantro, chopped (for garnish)

Sour cream (optional, for serving)

Instructions
 

Preheat the Oven:

    Preheat your oven to 375°F (190°C). Grease a muffin tin with cooking spray or line with muffin liners for easy removal.

      Cook the Beef:

        In a large skillet over medium heat, add the ground beef (or turkey), chopped onion, and minced garlic. Cook until the meat is browned and the onion is tender, about 5-7 minutes. Drain excess fat.

          Season the Meat:

            Stir in the taco seasoning mix, black beans, corn, and diced bell peppers. Cook for an additional 2-3 minutes until the vegetables are tender. Remove from heat and allow to cool slightly.

              Prepare the Batter:

                In a medium bowl, whisk together the eggs, milk, and salsa until well combined.

                  Combine Ingredients:

                    In a large mixing bowl, combine the cooked meat mixture and the crushed tortilla chips. Gradually pour the egg mixture into the meat mixture, stirring gently to combine. Fold in half of the shredded cheese.

                      Fill the Muffin Tin:

                        Spoon the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full. Sprinkle the remaining cheese on top, and add a few extra crushed tortilla chips for crunch.

                          Bake:

                            Bake in the preheated oven for 20-25 minutes, or until the muffins are set and lightly golden on top.

                              Cool and Serve:

                                Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack. Serve warm, garnished with fresh cilantro and additional salsa. Add a dollop of sour cream if desired.
