Ingredients

1 lb ground beef

1 packet taco seasoning

1 cup shredded cheddar cheese

1 cup salsa (mild, medium, or spicy based on preference)

12 small flour tortillas (or corn, if preferred)

1 cup refried beans

1 cup guacamole

1 cup sour cream

2 green onions, chopped

Optional toppings: fresh cilantro, sliced jalapeños, diced tomatoes, shredded lettuce

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Beef: In a skillet over medium heat, add the ground beef and cook until browned (about 5-7 minutes). Drain excess fat. Sprinkle in the taco seasoning and mix well, following the package instructions (usually adding some water). Let it simmer for a few minutes until the seasoning is fully incorporated.

Prepare Tortilla Cups: While the beef is cooking, lightly grease a muffin tin. Using a round cookie cutter or a glass, cut circles out of each tortilla that are slightly larger than the muffin cups. Gently press each tortilla circle into a muffin cup to form a little cup shape.

Layer the Ingredients: Add a spoonful of refried beans to the bottom of each tortilla cup, followed by a generous amount of seasoned ground beef, and then top it off with a sprinkle of shredded cheddar cheese.

Bake: Place the muffin tin in the preheated oven and bake for about 10-12 minutes, or until the tortillas are golden and crispy, and the cheese is melty.

Add Salsa: Once out of the oven, top each mini taco cup with a spoonful of salsa and a sprinkle of chopped green onions.

Serve with Sides: Serve the mini taco cups warm with a side of guacamole and sour cream. Add optional toppings like cilantro, jalapeños, diced tomatoes, or shredded lettuce as desired.

Enjoy: Dig into your delicious mini taco cups that are not only fun to eat but packed with flavor!
